Chicken and Cheese Quesadillas



  • 1 whole wheat tortilla or tortilla of choice

  • 1/2 cup chopped or pulled chicken

  • 1/4 cup shredded cheddar cheese

  • 1/2 cup finely chopped onions and peppers

  • 1/4 cup salsa (optional)

  • 1 tsp coconut oil

  • Salsa and sour cream for serving

Heat a large skillet over medium heat and add coconut oil. Let the oil melt.


Add the tortilla to the skillet and top with shredded cheese, leaving a small border around the edges. Cover with a lid and let it cook for one to two minutes until the cheese is melted.

Add the chicken to half the tortilla and top with onion and peppers or salsa, if preferred.


Fold the tortilla in half and gently press down. Cook for two to three minutes per side or until browned and crispy. Let the quesadilla cool slightly and then cut into wedges. Serve with salsa and sour cream or dip of choice. Enjoy!
