Nut and Seed Squares


1⁄4 cup raw cashew pieces ⁠

1⁄2 cup raw pumpkin seeds ⁠

1⁄2 cup unsalted almonds⁠

1⁄4 cup raw sunflower seeds ⁠

1⁄4 cup raw pumpkin seeds⁠

1⁄2 cup raisins⁠

1⁄4 tsp Himalayan salt⁠

1⁄4 tsp cinnamon⁠

1⁄4 cup dates, pitted (optional for extra sweetness)⁠

1⁄4 cup + 1 tbsp unrefined coconut oil⁠ ⁠


Put first 3 ingredients in food processor and pulse until very coarse. Optional: Add dates and pulse until coarse and dates are mixed in.


Put in bowl and add all other ingredients except coconut oil. Mix well with hands and then pour into a pan. Press firmly into the pan.


Heat coconut oil and pour over mix. Make sure to cover all areas, as this will hold it all together!


Refrigerate for 20 minutes and cut into squares. Keep in refrigerator to keep the coconut oil hardened and holding the bar together.
